Shanghai hairy crab: an autumn obsession
Once a year Shanghai eats an enormous quantity of small freshwater crabs and gets extremely particular about which ones.
From roughly September to December, Shanghai goes quiet about most things and loud about crabs. The Yangcheng Lake hairy crab has protected status and a genuine season, and the difference between a good one and a fake one is a long-standing local argument.
For a visitor it is less about whether the crab is authentic and more about joining in: it is slow, deliberate eating with a little pot of ginger tea and usually rice wine, and it is unlike anything else in Chinese food.
What you are eating
The prize is the roe and the fat — orange and deeply savoury. The meat itself is small and requires work, which is the point.
They are eaten steamed, usually split, with a dipping sauce of soy, vinegar and ginger. Ginger tea afterwards is traditional, to counteract the "cold" nature attributed to crab in Chinese medicine.
The authenticity question
Genuine Yangcheng Lake crabs are expensive and carry traceable tags. Many restaurants sell "Taihu Lake" or simply unlabelled crabs that are perfectly good and cost a third as much.
Practical advice: unless you care about provenance, order on size and freshness and do not pay for the certificate. If you do care, go to a specialist restaurant.
Is it worth it for a visitor?
Honestly, mixed. It is slow, messy, expensive eating for a small amount of meat, and many visitors prefer a crab roe xiaolongbao — same flavour, one bite, ¥30.
If you want the experience, do it once with someone who knows how. If you want the taste, find 蟹粉 xiefen anything during the season.
FAQ
Questions
Everything on this site is written and re-checked on the ground. When something changes, this page changes.
When exactly is the season?
Roughly late September to December, best from mid-October through November. Females have roe earlier; males have more fat later.
Can I eat it any other time of year?
You can buy frozen or imitation versions but there is no reason to. Wait for the season.
Is there a cheaper way to try it?
Crab roe dishes — xiefen xiaolongbao, crab roe noodles, crab roe tofu — which use the same roe at a fraction of the price.
